  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 tsp ground cardamom
  • 2 eggs
  • ½ cup softened butter
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 1 cups milk
  • 4 medium plums halved and pits removed

    For Cinnamon Whip:
  • 250 ml cold whipping cream
  • 1/2 tsp cinnamon
  • 1 tsp pure vanilla extract
  • 2 tbsp sugar "
  1. Preheat the oven to 350'F and line the bottom of a 9"" pan with parchment paper. In a large bowl, sift together the flour, baking powder, salt, and cardamom.
  2. In a small bowl, beat the butter, sugar, vanilla extract until well combined. Add the eggs and beat until combined.
  3. Alternatively add in the flour mixture and the milk to the butter mixture and mix until combined. Pour the batter into the prepared baking dish. Place the plum halves evenly around the cake.
  4. Bake in the preheated oven for 40-45 minutes or until golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool. Remove from the pan.
  5. Cinnamon whip: using the whisk attachment, whip the cream in the immersion blender container. Add the vanilla, cinnamon and sugar and whip until soft peaks (about 1 ½ minutes).
  6. Slice the cake and serve with cinnamon whip.
