Porchetta Marinade
With this savoury, fennel-scented marinade, a juicy and flavourful pork roast is easier than you think.

INGREDIENTS
3-5 lbs
boneless pork shoulder
2 tablespoons
fennel seeds
1 tablespoon
coarse kosher salt
2 teaspoons
black peppercorns
1 teaspoon
dried chili flakes
3
lemons, for zest and juice
1/2 cup
chopped green onion
1/2 cup
chopped mixed oregano, thyme, rosemary
6
large garlic cloves, minced
2 tablespoons
extra virgin olive oil
Directions
- Combine all ingredients in a bowl, then rub the paste on the inside of the pork shoulder.
- Marinate overnight.
- Roll the roast into a roll with the skin facing out, then tie with kitchen string or butcher’s twine.
- Cook at 350°F until interior temperature reaches 150°F.
- Let cool, slice and enjoy.
